			<content:encoded><![CDATA[<p>Life is kinda funny, tends to throw a curvball at you every now and then. Turns out in NYS that sending something certified mail does not count when reguarding legal papers. So I have to try to convince STBXW to sign them or try to get them back and serve her properly. Until then my joke of a marriage is in limbo.  Been almost a year since I told her not to bother coming back from her visit to Brooklyn to see her mom and spend some time with her &#8220;friends&#8221;. Since then she has caused me much grief in many forms and even hooked up with a guy while in Atlantic City, rumors have him living in the house, sources say yes and no, he is out of work and semi homeless, exwife and kid in NJ. Drunkard and a bum trying to possibly con his way thru life. Anywho I have decided to move on with my life as well so whatever to her and what she does. Seems my white knight problem is still around. Those who dont know what I&#8217;m talking about will have to guess.</p>
<p>But on the lighter side I just got my MP3 player, 4Gb Creative Zen. So far I am loving it, just wished I ripped my CDs onto my computer before I got it.  I may get an SD card for it  since it has the slot maybe try to get a 16GB and go up to 20GB total, we will see, guess it depends how big my collection gets when I start dl from music sites.</p>
<p>Its about 50 outside and Im doing laundry and ripping cds. Will probably go outside and try to take off that pump that shit the bed last fall and maybe work on Anges&#8217; bike needs inner tubes. Well that may do it for now but I will be posting some recipes from St Pats day at the Beechtree, sorry no corned beef and cabbage.</p>

STBXW will be getting papers soon, work is a drag (may start looking for new place), women are troublesome and are the bane of my existence. Saw most of my family this past weekend, it was a good visit kids are growing. Dad couldn&#8217;t make it due to weather and problems on his end. Saw my xgf that was good, I&#8217;m glad we buried the hatchet a while back. Work has been a drag recently hours cut here and there, sometimes I feel like its a losing battle so I&#8217;m going to update my resume and browse various job sites, someone must need a head/exectutive chef/kitchen manager. I gotta get that other car fixed and on the road soon, hopefully will work on it this week. I need to uplaod picts to myspace and facebook, and maybe do something with that webpage I have.</p>

			<content:encoded><![CDATA[<p>Well Children, Uncle Chuckie just got fed up with the truck. After a couple weeks of working on it amid visits, work, and Thanksgiving. Finally got the timing chain cover off so i could get to that problem area properly. What a f@#king mess. I not only not drill straight, I went into a cooling channel on the engine block. After talking to a couple people with a little more automotive know how than me decided to forge ahead and tap that. Well then the tap goes ahead and breaks off in the hole. Last straw for me. No way to remove it without buying more tools if even possible. So the truck is being sidelined indefinitely, and AB&#8217;s old car will get fixed so i can use it, better on mpg anyway. So the plan is to get up to Olive Bridge and hopefully no distractions, and a few hours the falcon will fly again and under new ownership. Brakes, tires and a windshield. not to hard to do. Got a parts list from Chris and off we go this weekend, hope he is around.</p>
<p>Other news, lets see work is work and well nuff said on that. The stbxw hasn&#8217;t bothered me much and the paperwork is being processed with clerks somewhere, should be getting a call about that hopefully soon. Got my old bed from Mom a couple weeks ago, feels so good and nice, damn how I missed that bed. AB got a freaking Xbox360 and GH3, its been fun. Looking forward to Christmas and a little holiday cheer.</p>

			<content:encoded><![CDATA[<p>Just hopefully got done fixin the Bronc. Should have been a simple 1-2 hr job, but unfortunately due to a bolt snapping in the engine block it is now day 4. Days 2 &amp; 3 were spent mainly drilling and trying to remove said bolt. Damn thing still in there so last night i decided to retap the hole and use a bigger bolt and praying it works. Still had a leak so after talking with my friend and brother, popped everything open again and put some silicone gasket in the area where it was leaking and a thin bead around the entire gasket. Letting it dry today and when i get home from work add fluid and start her up. Crossing fingers and toes and anything else that may cross, if it weren&#8217;t so painful maybe even my testes.</p>
<p>During this period of being face in engine most of the weekend I also had to be computer tech, think my hd is going on Midgard, simple fix either slide everything over to the other hd of just get a new one. Or better yet new computer time, hey i found that in the trash and it has served me well for the past 4-5 yrs. I will price it out and go from there.</p>
<p>Also had a couple calls and a visit from the wife, haven&#8217;t seen her in months since I told her not to bother coming back from her mom in Brooklyn. She came by for her alter crap and some mail, a freaking debit card in her fathers name, she didn&#8217;t want her car ins bill but i gave it to her anyway. She still thinks that there may be hope for the marriage, I don&#8217;t think so. She has a fat Irish drunk guy she is seeing, and she has not shone me anything really positive, other week she but the joint acct and one of her paypal accts, (the one she just got the card for,) into the negative. She want all her stuff but when she is ready to come get it, I&#8217;m temped to just load up the bronc and drive it down and dump it on her moms lawn. But I wont, yet, I&#8217;m a nice guy at heart. My curse is that I care to much sometimes. So until she pushes me over the edge , which will probably be soon knowing her I will continue to be nice and civil. The divorce papers should be ready to file, I will call him soon, gotta pay the bills first.  She will probably be shocked when she gets them, but Ihave told her many times it&#8217;s over and even suggested a couple yaers ago we go our seperate ways. There is no more love and all we do is fight. She has suppsedly move on with this guy, her mom says she dont love him, but if you want to try to fix thing with your partner not a good idea to start dating someone else. All he is doing is distracting her from getting better and the help she needs. After all the money she has made me waste on bank fees she has the gall to demand everything, she has no space for much of it, if she didnt waste all of my money and pester her mom to buy things, we propbably wouldnt have much. Not that there is alot, but she thinks that whatever her mom bought us is hers and not mine or ours, greedy bitch. She is demand the Toshiba laptop, which she hasnt used in 2-3yrs, because the new laptop her bf got her was stolen in Bklyn becuase the idiots left the trunk open with it in it. I talked to her mom about this and she has verified that the new one is gone and her Sony is still around. Cant wait to see her face when i tell her the HP was stolen from a friends house, she hasnt used that in like 4+ yrs.  I will give her crap but I am keeping what I need.</p>
<p>Ok enough ranting for one day. I gotta get ready for work.   OH by the way, ITs veterans Day , GO HUG A VET!!!</p>

			<content:encoded><![CDATA[<p>Risotto. A wonderous rich dish, so veristile, so complex and yet so simple. Risotto is an Italian rice dish made from arborio rice. Unlike other rice dishes you need to stir it almost constant and add the liquid in parts instead of all at once the result is a delictable creamy pile of goodness. I make alot of risotto at work each day adding something different. Meats, fish, veggies, fruits, cheeses, nuts. You can throw almost anything into risotto, it is a great medium to using the odd piece of whatever when you don&#8217;t have enough for  a few apps or entrees. Like the 1 duck breast I was left with the other night, Cook it up dice it add lets say maybe dried cherries  and walnuts and presto, duck risotto with cherries and walnuts. Or maybe braised Lamb (from that one or two shanks left) and kalamata olive risotto with sundried tomatoes. A customer has offered to back a book of risotto recipes and the bartender Ray keeps making up numbers for each new one I create, we joke that i have 1001 risotto recipes ( I dont have that many but it is getting close.) Maybe one of these days i will compile a list of risotto dishes I have created over the years. I have been daring on some &#8220;experiments&#8221; like veal risotto with capers and golden raisins. Truth betold I dont think I have found an item that didnt do well in risotto, if the ingredients go well together without the rice then the rice just gives it another layer of something.</p>

			<content:encoded><![CDATA[<p>Greeting to all, I am the one, the only, the Chef Chuck. No really I am a chef, I am also a son, brother, Marine, husband, uncle, fixer of cars, plumber, &#8220;ACer&#8221; (more on that later), a jack of all trades, and according one person &#8220;a very evil man&#8221;, others call me a tender soul, teddy bear, and white knight. I&#8217;ll let you decide what I am.<br />
Lets see where to start, guess at the beginning is always a good place. I was born in 1970 in Brooklyn NY, my brother Mondo came first, then John came a bit later, then more of us started coming out of the woodwork. Mom was single, did a damn good job with 3 boys, none of us has really gotten in to any serious trouble. I always wanted to be a chef so when I went to Park West VHS in Manhattan, which has a culinary program. Then in 1988 I joined the United States Marine Corps. Yes I am a jarhead and damn proud of it. During those years I was trained and worked on the HAWK missile system, went to war in Desert Shield/Storm, and traveled to Okinawa japan. When I left the Corps in &#8217;92 and decided to continue my culinary career, so in early &#8217;94 I went to the Culinary Institute of America and graduated in late &#8217;95. I worked in MSG and in a few restaurants around the NYC area for the next few years before moving up to the Hudson valley. In 2001 my life may have started a downward spiral, which I am now coming out of, when i started dating and eventually married Daisy. It has been a very rough 7 years, and I will rant about that portion of my life another time. We are now seperated and I hope to get a divorce soon. I am still cooking as head chef in a small restaurant in Po-town.<br />
What you will see here is me ranting about stuff (mainly to get it off my chest), recipes I want to share or have created, and little glimpses of the life of this chef.<br />
Hmmmm I think that&#8217;s will be it for now its late and i have clothes to hang and crap to do. Until later children behave yourselves.</p>
